Almond Paste (Fay Anne de Freitas)
18 oz ground almonds
9 oz caster sugar

9 oz icing sugar – sieved
3 egg whites
Almond essence
2 tbsp whiskey
  1. Mix almonds and sugar in a bowl.
  2. Blend in the egg whites, almond essence and whiskey to make a soft paste.
  3. Knead it until smooth and then divide into three equal portions.
  4. Roll one piece on a sugared board to a circle to fit the cake top.
  5. Roll remaining pieces in strips to fit around the side of the cake.
  6. Smooth all surfaces gently.
  7. Allow to dry for at least 3 days before icing.

Almond Paste (Gene Watkinson)
1 lb ground almonds
Almond essence

Juice of 1 lime
2 eggs OR 4 egg yolks
Rum
12 oz icing   sugar
  1. Mix all ingredients to a paste.
  2. Spread over a cake and sprinkle with icing sugar.
  3. If the cake is not very moist, first spread some egg white to help the paste stick.
