1-Day Garlic Pork (Gene Watkinson)
5 lb leg of pork OR
4 lb pork steak

6-10 sprigs of thyme
6 Wiri-Wiri peppers
Malt vinegar

2 oz garlic
3 oz salt
4 oz water

  1. Boil 4 oz water and then leave to cool.
  2. Cut the pork into cubes, leaving on the fat but no skin, and cover.
  3. In a small bowl, de-leaf the thyme.
  4. Cut the wiri-wiri peppers with a knife and fork and remove the seeds. Chop roughly and then add to the thyme. Add malt vinegar to cover.
  5. Peel the garlic and then crush in a garlic press and stir into thyme mixture.
  6. Wash a few pieces of the pork and place in a large bowl.
  7. Add the cooled water, 4 oz of malt vinegar, thyme mixture, salt and then toss lightly to mix thoroughly.
  8. Put into a jar and top off with either vinegar or a ¾ vinegar/ ¼ boiled water mix.
  9. Continue to fill further jars.
